----------------------------------- Chocolate Cookies with Marshmallow ----------------------------------- 1 3/4 C flour 1/2 C cocoa powder 1/2 tsp. salt 1 tsp. baking soda 1 C shortening 1/2 C brown sugar 1/2 C sugar 1/4 C soymilk: plain or vanilla 1 tsp. vanilla large egg-free marshmallows, cut in half ----------------------------------------- Preheat oven to 350 degrees Whisk flour, cocoa powder, salt and baking soda together in a medium bowl. Set aside. In a large bowl, cream shortening, brown sugar, sugar, soymilk, and vanilla together until well combined. Add the flour mixture to the shortening mixture and mix well. Drop dough by the tablespoon on ungreased cookie sheets. Bake 8 minutes. Remove trays from the oven and place half of a marshmallow in the center of each cookie. Return cookies to the oven and bake an additional 2 minutes. Let cool completely. OPTIONAL: top with chocolate frosting. ---------------------- Chocolate Frosting ---------------------- 1/2 C dairy-free margarine 2/3 C confectioner's sugar 1/4 C water 1 tsp. vanilla 1/2 C cocoa powder Cream all ingredients together in a bowl. Frost cooled cookies.
