******************************************** Andrea's Chocolate Cake ******************************************** 1.5 cups unbleached flour 1/3 cup cocoa 1 tsp baking soda .5 tsp salt 1 cup sugar .5 cup vegetable oil 1 cup cold water or brewed coffee 2 tsp vanilla 2 Tbsp cider vinegar ----------------------------------- Mix all dry ingredients in bowl; sift or whisk. Grease, flour, and line an 8x8 square or round pan w/ parchment or waxed paper (don't really need the parchment/waxed paper) Mix oil, water, vanilla w/ fork Pour into dry ingredients Add vinegar to all, mix until blended Pour everything into pan Cook at 375 for 25-30 minutes (actually usually needs at least 40 min for me) =================================== Frosting Glaze: .5 lb bittersweet chocolate (can make do with 4 oz) (if wholly unsweetened, add in some sugar) 3/4 cup hot water or hot milk or hot half-and-half (if using water, ideal if can sift cornstarch into it for thickness) 1/2 tsp vanilla Melt chocolate over very low heat Stir in hot milk or water & add vanilla Spoon over cooled cake and refrigerate ===================================
